Thai Curried Zucchini Fritters with Spicy Peanut Sauce

(makes 2 servings)

1 cup zucchini (grated)
1/2 cup flour
1 egg
2 tablespoons green curry paste (or red curry paste)
1 tablespoon fish sauce
1 green onion (chopped)
1 birds eye chili (sliced)
1 handful herbs such as cilantro, mint, Thai basil (chopped)
2 tablespoons oil
1/4 Thai spicy peanut sauce

1. Mix the zucchini, flour, egg, curry paste, fish sauce, green onions, birds eye chili cilantro and mint in a bowl.
2. Heat the oil in a pan.
3. Spoon the zucchini mixture into the pan and cook until golden brown on both sides, about 4 minutes per side.
4. Serve with spicy peanut sauce.
